I had my baking list all done and was content with what I was making this year. As Eliza and I perused the baking magazines at Walmart I spied Joy the Baker’s Favorite Holiday Recipes and specifically this moon pie bar recipe. And they looked so yummy I just couldn’t resist. Honestly I almost just made them for myself and didn’t share them. However I decided everyone needed a taste of the wonder that is moon pie bars. So I will be making me another batch this coming week, because they are gone and my tummy is sad over it.

Here’s what you’ll need

  • Semi sweet chocolate chips
  • marshmallow cream
  • butter, technically unsalted but they’re fine if you use regular too
  • brown sugar
  • 1 egg
  • vanilla extract
  • flour
  • graham cracker crumbs or 9-10 graham crackers crushed
  • baking powder
  • salt

Now Joy the Baker has more time than me and she made her own marshmallow cream

I however took a shortcut and used premade. I’m actively avoiding things that require me to stir them and not get distracted in the process. So if you don’t have littles trying to drive trains under your feet go ahead and check out her recipe to make your own marshmallow cream. I’m sure it’s amazing… I’m just trying to keep my sanity while doing the baking I enjoy.

So first things first make the dough

Technically you need a wet batter bowl and dry ingredients bowls, however this recipe will survive if you just dump it all in one bowl. Preheat your oven to 350 degrees. Prepare your pan for baking. You’ll need either an 8×8 or 9×9 square pan. Take a piece of parchment paper that hangs off the sides and lay it on top. Then in your mixing bowl cream together 1/2 cup softened butter and 3/4 cup brown sugar. Once it’s well combined mix in 1 egg and 1 tsp vanilla extract.
In a separate bowl, whisk together 1 cup all purpose flour, 1 cup graham cracker crumbs, 1/2 tsp baking powder, and 1/2 tsp salt. Add your dry ingredients to the wet ingredients and mix until well combined.

You’re halfway done!

Press 2/3 or what looks like 2/3 of the batter into your prepared pan. Try and get it nice an even or if you’re keeping munchkins from taking each other out wrestling on the floor, just do the best you can. Grab your jar of marshmallow cream and spread it on top. If it’s being a sticky mess try spraying your spatula with nonstick spray and that’ll help some. Just get it spread around as best you can. If it’s not even it’ll be just fine. Then sprinkle your chocolate chips on top.
For the top, take your remaining dough and make little islands or patties and place them on top. Don’t try and cover the top. You want seams between the pieces for the chocolate and marshmallow cream to seep through. I got my dough on top and thought it looked horrible. Remember the dough will spread as it bakes; so if you have huge spaces they will shrink with baking.

Now place it in the oven for 26-30 minutes or until the top is golden brown. Prepare to smell amazing things coming from your oven! Once it looks golden brownish take it out and let it cool about an hour. If you can wait that long it just makes them easier to cut. Then cut them into the sizes you’d like to devour and you’re done!

Ingredients

  • 1/2 cup unsalted butter, softened

  • 3/4 cup brown sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1 cup all purpose flour

  • 1 cup graham cracker crumbs

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/2 cups semi sweet chocolate chips

  • Jar of marshmallow cream

Directions

  • Preheat oven to 350 degrees. Line a 8×8 or 9×9 pan with parchment paper and set aside.
  • Cream together butter and brown sugar until fluffy. Add the egg and vanilla extract and beat until well combined.
  • Whisk together the flour, graham cracker crumbs, baking powder, and salt in a separate bowl. Add the flour mixture to the wet mixture until combined.
  • Press 2/3 of the batter into prepared pan until you have a nice thin even layer. Spread jar of marshmallow cream on top as evenly as you can. Sprinkle chocolate chips on top. Press and mold remaining dough on top into large flat pieces but leaving seams between the pieces for the chocolate and marshmallow cream to seep through.
  • Bake for 26-30 minutes or until the top is lightly golden brown. Remove from oven and allow to cool for an hour before cutting into bars.

Notes

  • If the Marshmallow cream is being a pain spray your spatula with nonstick cooking spray and that will help you spread it around.
