Eliza has been asking for chocolate cake and I thought about making a 12 layer cake, but I don’t have the energy for that much constructing right now. It’s been a while since my last blog. I took the month of January off after Christmas and then was ready to jump back in to blogging. Enter in my son discovering he can climb. My days are currently spent turning around to discover what he has climbed now. So I needed something quick and easy and this chocolate brownie cake is the answer!
I have seen this recipe multiple places, but I first saved the pin from Shauna at Best Blog Recipes. She’s got a gold mine of good recipes that I need to peruse here soon. Check it out and let me know what you find that is yummy. When I have time after pulling Richard off the table he’s standing on laughing at me from and wishing he hadn’t learned to pull out the drawers to climb the coffee table then I will do the same.
Here’s what you’ll need
- Brownie mix
- Chocolate cake mix
- Eggs
- water
- vegetable oil
- mayo
- chocolate chips
- heavy whipping cream
Quick and easy cake coming up
This recipe is a breeze so make sure to start by preheating the oven to 350 degrees. You will be ready to put it in before you know it. Unless of course you’re chasing a one year old who feels the need to climb everything! Prepare your bundt pan as well. The recipe didn’t call for it, but I always grease and flour my pans. There’s nothing worse than being ready for yummy cake and then it won’t fall out of the pan.
This makes A LOT of batter. My bundt pan is older so I’m not sure how many cups it holds, but my best guess would be maybe 12 cups. I had enough batter for a full bundt cake plus my pan that makes 6 mini bundt cakes.
In a large bowl, dump in the fudge brownie mix, chocolate cake mix, 4 large eggs, 1 1/4 cups water, 1 cup vegetable oil, and 1/2 cup mayonnaise. Mix until well combined. Fold in 1 cup chocolate chips. And that’s it! Fill the pans 3/4 of the way full. Then place in the oven and cook. My large bundt took 50 minutes and the mini bundt cakes were done in 30 minutes. Let the cake cool 15 minutes in the pan and then turn them out. Let cakes cool completely before topping with the ganache.

I had never made a ganache before! I’m not quite sure why, but I’d not used a recipe that called for one. Unfortunately for me the grocery store had no heavy whipping cream or half and half available. So I was forced to use 2% milk; which worked fine, but was probably a little thinner than it was supposed to be. So never fear if you can’t find heavy whipping cream you can use milk or half and half.
Before you start the ganache, prepare your cakes so you are not scrambling at the last moment. Yes in my distracted baking I failed to think about the fact that the ganache would roll off the cake and puddle on my counter. Sorry I was trying to keep the chaotic one year old from making us go to the er because he finally climbed the wrong thing. Place your cooling racks over cake pans the have an edge to contain the rivers of chocolate ganache.
In a small sauce pan, heat 1 cup heavy whipping cream over medium heat until steaming. While it is warming up get a medium sized bowl and add 2 cups chocolate chips. You can use semi sweet, milk chocolate, or dark chocolate depending on which you prefer. I used semi sweet. Make sure the cream is steaming pretty good and it is starting to get little bubbles around the edge, but don’t let it come up to a boil. Then pour the hot cream over the chocolate and immediately cover it with a plate.
This will let the chocolate chips soften up some. Whisk the mixture until the chocolate is smooth and glossy. Pour the ganache over your chocolate cakes until they are covered to your satisfaction. And that’s it! Yummy chocolate cake is your reward!
Now cut yourself a large slices and enjoy! This will be my reward for managing to make cake with ganache while removing my one year old from every climbing surface in the house. Today’s mountains were the coffee table, Eliza’s table, the chairs for Eliza’s table, the fireplace, the toy barn on the fireplace, the window ledge, and the tub next to the curio cabinet. I may need two slices at this rate.
Chocolate Brownie Cake

1 box chocolate cake mix
1 box fudge brownie mix
4 large eggs
1 1/4 cup water
1 cup vegetable oil
1/2 cup mayo
1 cup chocolate chips
- Ganache
2 cups chocolate chips
1 cup heavy whipping cream
Directions
- Preheat oven to 350 degrees. In a large mixing bowl, combine cake mix, brownie mix, eggs, water, oil, and mayo under well incorporated.
- Fold in chocolate chips.
- Grease and flour Bundt pan. This makes a large amount of batter so make sure it is a large Bundt pan. Spread batter evenly into pan.
- Bake 45-50 minutes or until a toothpick comes out clean. Cool cake for about 10-15 minutes and then turn out to finish cooling. When cooled prepare ganache.
- Ganache
- Heat heavy cream in a small saucepan until steaming. Pour cream over chocolate chips and cover with a plate for 2-3 minutes to contain heat and allow chips to soften.
- Whisk until mixture forms a smooth glossy ganache. Pour over cake.
Notes
- My bundt pan was too small for the amount of batter. I used my bundt and my pan with 6 mini bundts for this recipe.
- My best friend makes this recipe and adds Oreo crumbs to the ganache! Yummmmmm
