I am not a peppermint fan by any means. However if you add it to Oreos, I’m much more of a fan. This peppermint bark is equal parts Oreos and crushed peppermints and I just love it! Like the Oreo candy bark, you can swap out different kinds of chocolate or put in other toppings. If you love mint increase the amount of crushed peppermints and decrease the amount of Oreos.
Here’s what you’ll need
- 1/2 cup crushed oreos (about 8-9 oreos)
- 1/2 cup crushed peppermints
- your chocolate of preference
- 9×13 baking pan
- wax paper
The hardest part is choosing your chocolate!
Well depending on your chocolate of choice melting it may be the hardest part but you know what I mean. Peppermint bark, like oreo candy bark, is full of endless possibilities. Almond bark, baking morsels, and baking bars all work. You can use white chocolate, milk chocolate, dark chocolate, semisweet chocolate, and vanilla melting wafers. I tend to make a couple different varieties. This year I went with almond bark, but only because it could be easily melted in the microwave. You can melt the other chocolate in the microwave too. However you have to be more careful melting it, because if it gets too hot it will seize and start baking.
So I made a vanilla and half of a chocolate. I started off by crushing my oreos and candy canes in the food processor. You can just put them in a ziploc bag and crush them with a rolling pin, but it is much easier to crush peppermints in the food processor.
Step 1: Prep your pans first!
The chocolate starts to set up pretty quick so get your pans ready first. I used 9×13 cookie pans but you can use glass casserole dishes or larger cookie sheets. Just use what you have. It spreads easily, but isn’t very runny so you don’t need to worry about it running off the pan.
Step 2: Melt the chocolate
For almond bark follow the directions on the package to melt it in your microwave. If you’re using morsels or baking bars a double boiler is the best way to melt them. However I f you choose to use the microwave, I suggest heating in small increments and stirring often. It goes quickly from almost melted to seized yucky mess.
Step 3: Spread it out on the pan
Remember it’s hot! Spread the chocolate out to your desired thickness. Remember you’re going to break it into pieces so don’t get it too thick.
Step 4: Add toppings!
Sprinkle crushed peppermint and oreos on top. Make sure to lightly press down on top to make sure they harden into the chocolate.
Step 5: Refrigerate for about 30 minutes
Step 6: Break apart
And done! So easy and yummy.
