Here’s what you need
- 2 Devils food cake mix
- 4 eggs
- vegetable oil
- cream cheese
- butter
- Vanilla extract
- powdered sugar
- food coloring
This batter is super stiff. Like burn out your mixer stiff.
I use my stand mixer, but I watch it carefully so as not to burn it out. I would not recommend using a hand mixer. Preheat your oven to 350 degrees. Combine 2 devils food cake mixes, 4 eggs, and 2/3 cup vegetable oil. Make sure to scrape the bottom carefully as cake mix likes to hide down there. Roll batter into 1 inch balls and place on a cookie sheet. Technically you ought to flatten them slightly, but they do ok if you don’t. If I’m in a rush I use my cookie scoop instead of hand rolling them.
Bake at 350 for 8-10 minutes. They will flatten as they cool down. Just be careful not to overcook them. Allow the cookies to cool completely before making the icing. Which works out well because you need to set the butter and cream cheese out to soften.
Step 2 is icing
For Christmas I typically make green icing instead of red. It takes a lot of red food coloring to make a true red and pink looks too much like Valentine’s Day. In another mixing bowl, cream together 8 oz cream cheese and 1/2 cup butter. Mix in 1/2 tsp vanilla extract. Gradually mix in 3-4 cups powdered sugar. Some of it depends on your powdered sugar, but typically I use almost 4 cups of powdered sugar. Then add in your food coloring or just leave it white.
The easiest way to ice these is to pair up your cookies BEFORE you start icing them. There’s nothing more frustrating than ending up with two cookies at the end that are polar opposites. You also need to resist the urge to cram as much icing between the cookies as possible. Seriously, this is one time where less is more. My brother in law didn’t believe this at first until after he helped make them and then he agreed with us as well. Put a enough on to fill it and no more.
Now just let them sit and set up!
Now you’ve got yourself some yummy sandwich cookies that are delicious, but on the rich side so be careful not to eat too many.

3-4 cups powdered sugar
Food color of choice, optional
Directions
- In a large mixing bowl, combine cake mixes, eggs, and vegetable oil. Batter will be very stiff. Roll into 1 inch balls and place on ungreased baking sheet. Bake at 350 for 8-10 minutes. Cool completely.
- In another mixing bowl, cream together cream cheese and butter. Add vanilla, then gradually add powdered sugar. I typically use 4 cups or very close to it. Tint with food coloring if desired.
- Ice half the cookies and top with remaining. It’s easier if you pair them up before icing. Best if you let them sit overnight to set up before eating.
Notes
- Batter is very stiff so be careful if you use your stand mixer and do not use a hand mixer.
- Less is more when it comes to icing between the cookies.
